Banana & Chocolate Chip Muffin Recipe




Now, I have to admit I wouldn't usually consider myself a massive muffin fan. But I've recently just had the most intense craving for them. Not sure whether that it's because it's getting colder here in England, so I'm feeling like something slightly richer (and FYI these still slightly warm from the oven... so many noms). I had some ripe old bananas lying around, so it was meant to be!

Makes 12

Ingredients:
75g butter (melted)
125g caster sugar
250g self-raising flour
1tsp baking powder
1/2tsp bicarbonate of soda
1tsp cinnamon
pinch of salt
2 eggs
2 ripe bananas
1tsp vanilla extract (I use vanilla bean paste)
1 tsp honey
125ml milk
150g dark chocolate chips
(optional) sprinkling of demerara sugar

Method:
1. Preheat the oven to 180oC and line a 12-hole muffin tin with muffin cases
2. Melt the butter and leave to cool
3. Sift the flour, baking powder, bicarb, cinnamon, salt and sugar in a bowl, stir and set aside
4. Mash the bananas
5. In a separate bowl whisk the cooled butter, eggs, milk, vanilla, honey together and combine with the mashed bananas
6. Combine the wet ingredients in with the dry with a fork and add in the chocolate chips
7. Scoop the mixture into the cases, mine ended up nearly at the top of each one
9. I chose to sprinkle each muffin with some demerara sugar for a nice crunchy topping
10. Bake for around 20 minutes, they're done when they're golden brown and no raw mixture comes off a skewer
